The Harvest in Colombia has two crops throughout a year. These crops include mitica or main harvest which is usually picked from July/August and again in November/December. However previous years of mitica harvest have been poor and this year mitica has rolled into the second harvest creating one single harvest for the year. This means that the availability of quality micro-lots has diminished significantly.

Los Guacharos is a collective of small lot producers who have signed an agreement on strict processing methods thereby guaranteeing consistency from their co-operative. All cherries are floated, removing the floaters that are under-ripe.  Cherries are processed leaving a small amount of mucilage on the parchment for washing. Dry fermentation occurs in designated tanks and can take 24-40hrs. Shade drying sees the control of ventilation and moisture loss.

These meticulous processing methods produce coffees of clarity and consistency. Los Guacharos has flavours of black cherry and butterscotch with a delicate acidity to finish.
