In the southern State of Oromia, in the village of Hora Ela a man named Kenan Asefa collects cherries from small lot farmers and brings them to his washing station in Chiri. Here the cherries are meticulously sorted and graded for size and ripeness. They are then floated to remove the under-ripe and damaged fruits. The coffee is then de-pulped and further graded by weight. The coffee is soaked to remove the mucilage through natural fermentation and soon after it is washed in water channels to clean it for air drying. Once on the drying beds, first in the shade for a day and then in the sun, the coffee is turned regularly while being hand sorted constantly being worked over for size and defect. During the intense heat of midday the coffee is covered to prevent it drying too quickly. This is the processing complexity of grade 1 washed coffees from Ethiopia and one of the reasons why they are some of the best coffees in the world.
