Los Guacharos B is our second offering in the same harvest year from this Huila Co-Ooerative. Los Guacharos is a collective of small lot producers who have signed an agreement on strict processing methods thereby guaranteeing consistency from their co-operative.

All cherries are floated, removing the floaters that are under-ripe.  Cherries are processed leaving a small amount of mucilage on the parchment for washing. Dry fermentation occurs in designated tanks and can take 24-40hrs. Shade drying sees the control of ventilation and moisture loss. These meticulous processing methods produce coffees of clarity and consistency.

Los Guacharos B is sweet and bright with flavours of stonefruit and marshmellow. We have roasted this bean as a light filter profile to best highlight these particular flavours.
