We continue or run of ridiculously good Colombian Micro-lots with Hector Zuñiga. Special attention was given to this 100% Caturra lot when picking and processing. Strict regimes of only picking the ripest of cherries is the start, next the coffee is exposed to 50 hours of anaerobic fermentation before pulping and then a further 80 hours after pulping. The coffee is then dried on parabolic beds with a close eye on moisture levels. 

The Caturra variety is a good coffee to grow in Colombia. Caturra produces more fruit and is more resistant to disease than many other bourbon hybrids.  

Tastes like: Caramel, grapefruit, stone fruit, guava with a green apple acidity
